Buttercream Icing

Never buy store made frosting ever again! With a few simple ingredients, you are minutes away from a creamy, rich and buttery topping for all your baked goods.


This is my basic buttercream recipe. I use it as a base for all my cupcakes and even layered cakes. I can adjust the flavor my adding extracts, the tint by adding food coloring and the texture by adding toppings. No matter what your recipe calls for start with this and let your culinary imagination soar.


Ingredients:

  • 1 Cup unsalted butter (2 sticks), softened but not melted.

  • 3-4 Cups Confectioner's Sugar, Sifted (Powdered Sugar)

  • 1/4 Teaspoon Table Salt

  • 1 Tablespoon Vanilla Extract or Almond Extract

  • 2-4 Tablespoons of Heavy Cream or Half & Half

Method:


  1. Using a paddle attachment, beat butter in a mixer for 2-3 minutes--until the yellow butter turns a lighter, pale shade of yellow.

  2. Add your confectioner's sugar 1 cup at a time on the lowest setting. This is a tedious process but it will prevent you and your kitchen from having a total powdery mess.

  3. Once the 3rd cup of sugar has been added and incorporated completely with the butter, increase your mixer speed to medium.

  4. While the mixer is on carefully add in your salt, extract, 2 tablespoons of the heavy cream or half and half and beat for about 3 min. Give your buttercream a quick check. Is it the consistency you were looking for? Check out my Tee Tip below to help you gauge what the best consistency might be.

Tee Tip: If you are piping it around a cake then you'll want a thicker consistency so go ahead and add in that last cup of confectioners sugar. If you want to thin it out for a fluffier topping for your cupcakes then add the heavy cream or half & half one tablespoon at a time.

Variations:


As you can see this is as basic as a buttercream recipe can get. But don't let its simplicity fool you. It can be easily transformed to create bold flavors, crunchy texture and brilliant colors like a few of my samples above. The possibilities are endless! Here are some suggestions on how to elevate my basic buttercream.


Try any one of these toppings below:

  • 1/4 Cup of crushed Oreos

  • 1/4 Cup of Chopped up Brownies (fold it in)

  • 1/4 Cup of your favorite chopped nuts (fold it in)

  • 1/4 Cup of Coconut flakes (Fold it in or sprinkle on top)

  • 1/4 of Mini Chocolate chips

  • 1/4 of Sprinkles (Who doesn't love a good funfetti cupcake)

  • Food Coloring, start with a few drops and keep adding until your desired tint.

  • Extracts: You can replace vanilla or almond extract with any extract to give your buttercream a flavor that better suits your cake.
