Turkey and Cheese Roll Ups


Whether it's virtual, in-person or a hybrid model, kids across America are going back to school. Unlike any other time before, they are wearing masks, socially distancing & discouraged from any form of physical contact like hugging. And just like everything else in their school day, our lunch time interactions will also be a little different this year. Gone are the days of sharing & lunch swapping.

As my kids return to a full time, in-person model, I wanted to carefully plan out their lunches with our new normal in mind. For now, I wanted to create nutritious meals that can be easily eaten with a fork or spoon rather than using their hands. Several of our favorite finger licking meals include sandwiches, DIY tacos, nachos & roll ups. So this has led me to create new ways of offering the same foods they love while considering their safety in mind.


The solution? Well, the solution was quite simple, wrapping their favorite meat & cheese roll ups in foil therefore avoiding direct contact with their food. Now I'm not naive to think they will never touch their food but I tried to make it one step easier. I also included a little cocktail fork for them to use on their sides like strawberries & a blueberry muffin.

These roll ups are super easy, can be made & stored in the refrigerator the night before and can be adjusted to suit different dietary lifestyles. I'll give you the basic recipe below and it's also available on my blog. Keep in mind that these are the meats and cheeses my girls like but they can easily be adapted to your child's palate.

Also, I am a bento box mom. I love the compartments because it gives me an opportunity to provide a variety of foods. I try to include one fruit, a vegetable &/or one sweet treat as you can see in the pictures above.


Ingredients:

Meat & Cheese Roll Ups

-1/2 Cup Mayo

-1/2 Cup Shredded Cheese

-2 slices of the Meat of your choice per roll up(Turkey, Pepperoni, Roast Beef, Ham)

-Lettuce (I used iceberg)

-Soft Taco Tortillas

Vegetarian option:

Substitute the meat for vegetables & tofu.

Optional healthy add ins:

Green Peppers, Onions, Tomatoes, Spinach to name a few.

Directions:

Combine mayo & cheese in a bowl and spread the mixture onto a tortilla. Then add your protein of choice, vegetables (if any) and top it off with some shredded lettuce. Now roll up your tortilla and lay flat down on the seam side. Cut a square piece of foil and wrap the bottom portion of the roll up.


Tip: The mayo & cheese spread makes about five to six roll ups but you can easily half the recipe.
